Most plug-ins publishers bundles are not yet Mac Big Sur-compatible.
At this time, Eventide and Mathew Lane and McDSP have announced that their bundles are Mac OS 11 ready.
You can download the installers for the OS 11 directly off of the plug-in publishers' websites:

- Mathew Lane: DrMS Download page / StereoDelta Download page / TiCo page
You should also confirm that the DAW(s) you use are working with Big Sur before upgrading.
